it rains usually in the late afternoon.
We love spending more time outdoor with my kids. They love to run around the garden, play in the sandpit, eat ice cream and blowing bubbles.
of course, i baked my favorite vegan banana muffin recipe..good for summer afternoon tea time and snack. though usually i love to have this as my breakfast.
BANANA MUFFINS
12 muffins
3 ripe bananas
1/4 cup oil or melted margarine (if your a vegan use vegan margarine)
1 cup sugar
2 cups flour
1 tsp. salt
1 tsp. baking soda
1 cup chopped walnuts (optional)
* Mash banana (overripe ones are great)
* add oil/margarine and sugar. mix well.
* Sift the flour, salt, and baking soda together and add the banana mixture. Mix until flour is blended (do not beat)
* Pour into muffin pan or bread pan and bake at 360 degrees F / 180 degrees Celcius or until toothpick comes out clean.
Optional: Add a harmful of walnuts, oatmeal, raisins or sultanas, chocolate chips, currants, coconut or all of the above.
