Fried Rice with Homemade Kiełbasa

Rice is a staple in a diet for most Asians. I am Asian and particularly a full blooded Filipina. So, I consider myself a rice-vorous person. (*wink) Meaning, I can't live without eating rice in a day or anytime of the week. The advantage of rice as well is that, it is easy to prepare. Just put it in a rice cooker ( note: that most Asian household owns a rice cooker. It's a must have kitchen tool. ) and you are good to go.

Fried rice is my all time favourite comfort food. It makes me feel like I'm home. Moreover, it is easy to prepare and eat. 

Yesterday, I cooked fried rice with homemade kiełbasa - Polish sausage, that I ordered last Easter from a friend. I ordered a plenty that I put some of them in the freezer so when I need one for a recipe, I have available ones to pull out anytime.  I'm not so fan of eating sausages, but homemade ones always put a special smile on my face. You know why...because I just love homemade goodies.  So, let me share my fried rice recipe. There is no secret into this recipe, just put your heart into it like how you love eating rice. (smile)

fried rice with homemade 
kiełbasa

 You need:

3-4 cups of rice - leftover or cooked it the night/day before is better.
3-4 regular size kiełbasa - sausage (homemade is always the best) 
Note: you can use ham too or available sausage or hotdog you have at home
2 cloves of garlic - minced
Medium sized carrots - cut into small pieces
button mushroom about a handful - cut into pieces
Scallions or spring onions - I used the bulb for the saute part with the garlic , cut the green leaves into pieces
green peas - about half a cup
2 tablespoons of black soy sauce - you can use light soy sauce too
knorr seasoning - optional
salt and pepper to taste
2 tablespoons of canola oil - for frying 
sesame seed oil -optional

How to:

- Heat pan and when it is heated, pour in oil.
- Saute garlic and bulb of scallion.
- Add carrots, wait for about two minutes.
- Add mushrooms and homemade kielbasa. 
-Add cooked rice.
- Add green peas. Stir and wait for a minute.
-Pour in some seasoning, about 6 drops. Stir to mix ingredients. wait for a minute before adding the soy sauce.
-Taste and seasoned it with salt and pepper if you feel like it needs more taste. For me, the soy sauce is enough to make it tasty. I just have to add a bit of pepper.
- Add green leave scallions, on top, sprinkle some sesame seed oil for some aroma and serve hot. 

Enjoy you meal!

You can serve it along with some of your favourite green salads.
