Tuna flakes Salad

Eating lunch for me is always making a healthy options. It should be mix with simplicity of the foods and easy to prepare meal.  Today, I needed to empty  my fridge to prepare for next weeks menu. I still have enough salads, veges and fruits needed to eat while they are still fresh. 

Today, I made a simple salad of tuna flakes mixed with fresh greens, seedless grapes, tomatoes, cucumber, and i thinly cut the apples into strips, drizzled with honey-lemon dressing. Mixing all  together and I've got a wonderful healthy simple salad to eat for lunch.

For the honey lemon dressing, I adapted this recipe from one of my favourite, Chef Jamie Oliver's blog.

 honey-lemon juice dressing:

6 tablespoons of extra virgin oil
3 tablespoons of freshly squeezed lemon
1 tablespoon honey
sea salt and pepper to taste

* mix everything and that's a wonderful dressing for your salad. 

It's as simple as it is, right?
